Chicken Stew:

  • 1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into chunks
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 3 medium potatoes, peeled and cubed
  • 1/2 cup frozen peas
  • 1/2 cup green beans, trimmed and chopped
  • 1 (14.5-ounce) can diced tomatoes with juice
  • 3 cups low-sodium chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • Chopped fresh parsley for garnish

Instructions

  1. Sauté Aromatics: Set the Instant Pot to sauté mode and heat the olive oil. Add the onion and garlic, cooking for 2 to 3 minutes until softened.
  2. Cook Chicken: Add the chicken and cook for about 3 to 4 minutes until lightly browned.
  3. Add Ingredients: Stir in the carrots, celery, potatoes, green beans, diced tomatoes, chicken broth, tomato paste, thyme, rosemary, paprika, bay leaf, salt, and pepper. Cancel sauté mode.
  4. Pressure Cook: Secure the lid and set to cook on high pressure for 10 minutes. Natural release for 10 minutes, then quick release.
  5. Thicken Stew: Remove the bay leaf. For a thicker stew, stir in the cornstarch slurry and simmer on sauté mode until thickened.
  6. Finish: Stir in the peas and cook for another 2 to 3 minutes. Garnish with fresh parsley before serving.
