Chicken Stew:
- 1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into chunks

- 3 medium potatoes, peeled and cubed
- 1/2 cup frozen peas
- 1/2 cup green beans, trimmed and chopped
- 1 (14.5-ounce) can diced tomatoes with juice
- 3 cups low-sodium chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon paprika
- 1 bay leaf
- Salt and black pepper to taste
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
- Chopped fresh parsley for garnish
Instructions
- Sauté Aromatics: Set the Instant Pot to sauté mode and heat the olive oil. Add the onion and garlic, cooking for 2 to 3 minutes until softened.
- Cook Chicken: Add the chicken and cook for about 3 to 4 minutes until lightly browned.
- Add Ingredients: Stir in the carrots, celery, potatoes, green beans, diced tomatoes, chicken broth, tomato paste, thyme, rosemary, paprika, bay leaf, salt, and pepper. Cancel sauté mode.
- Pressure Cook: Secure the lid and set to cook on high pressure for 10 minutes. Natural release for 10 minutes, then quick release.
- Thicken Stew: Remove the bay leaf. For a thicker stew, stir in the cornstarch slurry and simmer on sauté mode until thickened.
- Finish: Stir in the peas and cook for another 2 to 3 minutes. Garnish with fresh parsley before serving.
