Ingredients

Olive Oil:

1 tablespoon

Smoked Sausage:

14 ounces, sliced into rounds

Baby Potatoes:

1 ½ pounds, halved or quartered

Onion:

1 small, sliced

Bell Pepper:

1, sliced

Garlic:

2 cloves, minced

Smoked Paprika:

1 teaspoon

Dried Thyme:

½ teaspoon

Salt and Black Pepper:

to taste

Chicken Broth or Water:

¼ cup

Fresh Parsley:

for garnish


Instructions

  1. Heat Olive Oil: In a large skillet over medium-high heat, heat olive oil.
  2. Cook Sausage: Add the sliced smoked sausage and cook until browned on both sides, about 5–6 minutes. Remove sausage from the skillet and set aside.
  3. Cook Potatoes: In the same skillet, add potatoes and cook for 8–10 minutes until they begin to brown.
  4. Add Ingredients: Add onion, bell pepper, garlic, smoked paprika, thyme, salt, and pepper. Stir to combine and cook for another 2–3 minutes.
  5. Simmer: Pour in the chicken broth or water, reduce heat to medium, cover, and let simmer for 10–12 minutes until potatoes are fork-tender.
  6. Combine and Heat: Return the sausage to the skillet and stir everything together. Cook uncovered for another 2–3 minutes until heated through.
  7. Garnish and Serve: Garnish with fresh parsley and serve warm.
