  • 2 large eggs, beaten

Instructions

  1. Freeze Ice Cream Scoops: Place the ice cream scoops on a baking sheet lined with parchment paper and freeze for at least 2 hours until very firm. This step ensures the ice cream holds its shape during frying.
  2. Prepare Coatings: In a shallow bowl, combine crushed cornflakes, granulated sugar, and ground cinnamon. Place the all-purpose flour in a separate shallow bowl and the beaten eggs in another shallow bowl. These will be used to coat the ice cream scoops properly.
  3. Coat the Ice Cream: Lightly roll each frozen ice cream scoop in flour, then dip it into the beaten eggs, and finally coat thoroughly with the cornflake-sugar-cinnamon mixture. For added protection and crunch, freeze the coated scoops again for 30 minutes before frying.
