Description

This Honey Lime Chicken & Avocado Rice Stack is a flavorful and vibrant dish that combines tender honey lime chicken with creamy avocado and fragrant cilantro-lime rice. It’s a visually appealing meal that’s easy to assemble and bursting with fresh flavors.


Ingredients

For the Chicken:

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • juice of 2 limes
  • 2 cloves garlic (minced)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Rice Layer:

  • 2 cups cooked jasmine or basmati rice
  • 1 tablespoon lime juice
  • 1 tablespoon chopped cilantro
  • salt to taste

For the Avocado Layer:

  • 2 ripe avocados (diced)
  • 1 tablespoon lime juice
  • pinch of salt

Optional Toppings:

  • extra cilantro
  • lime wedges
  • hot sauce
  • diced red onion

Instructions

  1. Marinate the Chicken: In a small bowl, whisk together olive oil, honey, lime juice, garlic, chili powder, cumin, salt, and pepper. Marinate the chicken for at least 30 minutes. Cook the chicken until done, then slice.
  2. Prepare the Rice and Avocado: Combine warm cooked rice with lime juice and cilantro. Toss diced avocado with lime juice and salt.
  3. Assemble the Stacks: Layer rice, avocado, and sliced chicken in a mold. Garnish and serve.
