- 1/2 pound breakfast sausage or ground beef

- 1/2 cup bell pepper (diced)
- 4 large eggs
- 1/4 cup milk
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
For Assembly:
- 4 large flour tortillas
- 1/4 cup salsa
- 1/4 cup sour cream
- 2 tablespoons fresh cilantro (chopped)
Instructions
- Cook the Filling: Heat olive oil in a skillet, add sausage, onion, and bell pepper, cook until browned. Whisk together eggs, milk, spices, scramble with cheese, and set aside.
- Assemble: Warm tortillas, spoon egg mixture down the center, roll into logs, slice into pinwheels or wraps.
- Finish: Sprinkle with cheese, drizzle with salsa and sour cream, garnish with cilantro. Serve warm.
