Candy:
- 4 ounces cream cheese, softened
- ¼ cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 1 ½ cups sweetened shredded coconut
Coating:
- 1 tablespoon ground cinnamon
Instructions
- Mix Cream Cheese and Butter: In a large mixing bowl, beat the softened cream cheese and butter until smooth and creamy.
- Add Vanilla Extract: Mix in the vanilla extract until well combined.
- Incorporate Powdered Sugar: Gradually beat in the powdered sugar, one cup at a time, until a thick dough forms.
- Add Coconut: Stir in the shredded coconut until evenly distributed.
- Shape Candy: Roll the mixture into small balls, about 1 inch in diameter.
- Coat with Cinnamon: Roll each ball in the ground cinnamon to coat thoroughly.
- Chill: Place the candies on a baking sheet and refrigerate for at least 1 hour before serving.
