Scale
Main Ingredients
- 3 cups Cereal (small flakes or shapes like Cheerios or Rice Krispies)
- 1 cup Nut Butter (creamy or crunchy peanut butter, almond butter, or sunbutter)
- 1/2 cup Liquid Sweetener (agave syrup, honey, or brown rice syrup)
- 1/2 teaspoon Salt
- Protein Powder (optional, adjust quantity as desired)
Instructions
- Prepare the pan. Line an 8-inch square pan with wax or parchment paper to prevent sticking and allow for easy removal of the bars later.
- Warm the nut butter if needed. If your nut butter is thick and difficult to mix, warm it in the microwave for 15-20 seconds to soften it slightly for easier blending.
- Mix ingredients. In a large bowl, combine the cereal, warmed nut butter, liquid sweetener, and salt. Add protein powder if using. Stir until all ingredients are evenly blended and the mixture starts to clump together.
- Transfer and press mixture. Pour the mixture into the prepared pan. Use your hands or a spatula to press down firmly, compacting it evenly to ensure the bars hold together well.
- Freeze to set. Place the pan in the freezer for about 30 minutes to let the bars firm up. This cooling step helps them solidify and become easy to cut.
- Cut and serve. Once firm, remove the bars from the pan using the parchment paper edges. Cut into 12 bars and store in an airtight container in the fridge or freezer as desired.
Notes
- Use cereals with small shapes for best binding and texture.
- Adjust sweetness by experimenting with different liquid sweeteners or quantities.
- Optional protein powder can increase protein content without affecting texture too much.
- Bars can be stored in the freezer for longer shelf life or refrigerated for up to a week.
- Warming nut butter makes mixing easier but avoid overheating to prevent changing flavor.
