Ingredients
For the crust:
- 1¾ cups graham cracker crumbs
- ⅓ cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the filling:
- 2 cups fresh mango puree (from about 2–3 ripe mangoes)
- 1 (14-oz) can sweetened condensed milk
- ½ cup heavy cream (or coconut cream for dairy-free)
- 2 large eggs
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- Pinch of salt
Optional topping:
- Whipped cream or coconut whipped cream
- Fresh mango slices
- Lime zest or mint for garnish
Instructions
- Preheat oven: Preheat oven to 350°F (175°C).
- Prepare filling: In another bowl, whisk together mango puree, sweetened condensed milk, heavy cream (or coconut cream), eggs, lime juice, lime zest, and salt until smooth. Pour into crust.
- Final touches: Top with whipped cream and garnish with mango, lime zest, or mint.
In a bowl, combine graham cracker crumbs, sugar, and melted butter until the mixture holds together when pressed. Press it evenly into the bottom and up the sides of a 9-inch pie pan. Bake for 8–10 minutes until lightly golden. Remove and allow to cool slightly.
Bake for 25–30 minutes, until set around the edges but slightly jiggly in the center. Cool to room temperature, then chill for at least 2 hours.
