Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Cream Butter and Sugars: In a large bowl, cream softened butter with granulated sugar and brown sugar until light and fluffy. Beat in egg and vanilla extract.
- Combine Ingredients: Gradually mix in the dry ingredients until just combined. Fold in oats, diced peaches, and white chocolate chips if using.
