Description

Italian Love Cake is a decadent layered dessert combining moist chocolate cake with a creamy, tangy cream cheese layer and a smooth sour cream topping, finished with a hint of espresso and mini chocolate chips for extra indulgence. Perfect for special occasions or a delightful treat.

Ingredients

Scale

Chocolate Cake

  • 1 box of chocolate cake mix (plus ingredients as per package instructions)

Cream Cheese Layer

  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Sour Cream Topping

  • 1 cup sour cream
  • 1/2 cup powdered sugar
  • 1 tablespoon espresso powder (optional)
  • 1/2 cup mini chocolate chips (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan thoroughly to prevent sticking and set it aside.
  2. Prepare Cake Batter: Follow the instructions on the chocolate cake mix box to prepare the batter. Once ready, pour the batter evenly into the greased pan.
  3. Make Cream Cheese Layer: In a separate bowl, beat the softened cream cheese, granulated sugar, vanilla extract, and eggs together until the mixture is smooth and creamy with no lumps.
  4. Layer Cream Cheese Over Batter: Gently and evenly spread the cream cheese mixture over the chocolate cake batter in the pan, taking care not to mix the layers.
  5. Prepare Sour Cream Topping: In a small bowl, blend the sour cream, powdered sugar, and optional espresso powder until smooth. Spread this evenly over the cream cheese layer to create the top layer of the cake.
  6. Add Chocolate Chips: Sprinkle mini chocolate chips evenly over the top of the sour cream layer if using. This adds extra texture and flavor.
  7. Bake: Place the pan in the preheated oven and bake for 45-50 minutes. The cake is done when the top is set and a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow the cake to cool completely in the pan on a wire rack before slicing into 12 squares for serving. This ensures clean slices and enhances the flavor.

Notes

  • If you prefer a stronger coffee flavor, increase the espresso powder to 1.5 tablespoons.
  • Ensure the cream cheese is fully softened to avoid lumps in the mixture.
  • Use full-fat sour cream for best texture and flavor.
  • The mini chocolate chips can be omitted or substituted with chopped nuts for a different crunch.
  • Store leftovers covered in the refrigerator for up to 4 days.
