Sausage Sauce

- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste

Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Cook the bow tie pasta according to package instructions for 10-12 minutes until al dente. Reserve half a cup of pasta water, then drain the pasta and set aside.
- Brown the sausage: Heat olive oil in a large skillet over medium heat. Remove casing from the Italian sausage and crumble the meat into the skillet. Cook for 5-7 minutes until browned and cooked through.
- Sauté garlic: Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, stirring frequently to avoid burning.
- Add tomatoes: Pour diced tomatoes into the skillet with the sausage and garlic. Stir well and let the mixture simmer gently for 5 minutes to meld flavors.
- Season and flavor: Stir in the chopped fresh basil leaves and red pepper flakes. Season with salt and pepper to taste. If the sauce is too thick, add some of the reserved pasta water to loosen it.
- Toss pasta with sauce: Add the drained bow tie pasta back into the skillet. Toss thoroughly to coat the pasta evenly with the sauce. Cook together for an additional 2-3 minutes to heat through.
- Serve: Plate the pasta and sprinkle generously with grated Parmesan cheese. Garnish with extra fresh basil leaves and serve warm immediately.
