- Whisk egg whites: Until stiff peaks form.
- Combine: Gently fold egg whites into the lemon batter.
- Bake: In a water bath for 45 minutes until golden on top and slightly jiggly underneath.
- Rest: Allow to sit for 5 minutes before serving.

- Avoid opening the oven door during the first 35 minutes to prevent sinking.
