For the Spicy Mayo Sauce:

  • 1/2 cup mayonnaise
  • 1–2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon sesame oil

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the meatballs: In a large bowl, mix together the ground beef, panko breadcrumbs, egg, garlic, green onions, ginger, soy sauce, sesame oil, brown sugar, pepper, and salt until just combined. Form meatballs and bake for 15–18 minutes.
  3. Make the Spicy Mayo Sauce: While the meatballs are baking, whisk together the mayonnaise, gochujang, rice vinegar, honey, and sesame oil in a small bowl until smooth.
