Description

These hearty Kielbasa Cowboy Beans are a delicious and satisfying meal or side dish, perfect for cookouts and gatherings. Packed with flavor from smoked sausage and a variety of beans, this dish is a crowd-pleaser.

Ingredients

Scale

Ingredients:

  • 1 tablespoon olive oil
  • 14 ounces kielbasa sausage, sliced into rounds
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) baked beans, undrained
  • 1 can (14.5 ounces) diced tomatoes, drained
  • ½ cup barbecue sauce
  • ¼ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil: In a large skillet or Dutch oven over medium heat, add olive oil. Brown the sliced kielbasa for about 5 minutes. Remove and set aside.
  2. Sauté onion and garlic: In the same pan, cook diced onion until soft, about 4 minutes. Add garlic and cook for another 30 seconds.
  3. Combine ingredients: Return kielbasa to the pan. Add pinto beans, black beans, baked beans, and diced tomatoes. Mix in barbecue sauce, ketchup, brown sugar, mustard, chili powder, smoked paprika, salt, and pepper. Stir well.
  4. Simmer: Bring the mixture to a simmer, then reduce heat to low. Cook uncovered for 20–25 minutes, stirring occasionally until thick and bubbly.
  5. Serve: Enjoy warm as a main or side dish.

Notes

  • This dish tastes even better when made ahead and reheated.
  • Add liquid smoke or use smoked kielbasa for a smokier flavor.
  • Great for cookouts and potlucks.
