Beef Stew:
- 2 pounds beef chuck or lamb shoulder, cut into large chunks
- 3 tablespoons olive oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 2 large carrots, sliced
- 1 stick celery, diced
Sauce:
- 1 can (28 ounces) crushed tomatoes
- 2 tablespoons tomato paste
- 1 cup red wine
- 2 cups beef broth
- 2 bay leaves
- 1 teaspoon ground cinnamon
- 1 teaspoon dried oregano
- 1/2 teaspoon allspice
- 1/2 teaspoon ground black pepper
- 1 1/2 teaspoons salt
- 2 tablespoons red wine vinegar
- 2 tablespoons chopped fresh parsley
Instructions
- Brown the Meat: Heat olive oil in a large pot, brown beef/lamb, set aside.
- Sauté Vegetables: In the same pot, cook onion, garlic, carrots, and celery.
- Add Flavor: Stir in tomato paste, then deglaze with red wine.
- Cook the Stew: Add crushed tomatoes, broth, spices, and return meat to pot. Simmer for 2-2.5 hours.
- Finish and Serve: Stir in red wine vinegar, garnish with parsley, and serve hot.
