Beef Stew:

  • 2 pounds beef chuck or lamb shoulder, cut into large chunks
  • 3 tablespoons olive oil

  • 2 large carrots, sliced
  • 1 stick celery, diced

Sauce:

  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 2 cups beef broth
  • 2 bay leaves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon dried oregano
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ground black pepper
  • 1 1/2 teaspoons salt
  • 2 tablespoons red wine vinegar
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Brown the Meat: Heat olive oil in a large pot, brown beef/lamb, set aside.
  2. Sauté Vegetables: In the same pot, cook onion, garlic, carrots, and celery.
  3. Add Flavor: Stir in tomato paste, then deglaze with red wine.
  4. Cook the Stew: Add crushed tomatoes, broth, spices, and return meat to pot. Simmer for 2-2.5 hours.
  5. Finish and Serve: Stir in red wine vinegar, garnish with parsley, and serve hot.
