Scale
Dry Ingredients
- 2 cups (240 g) all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon, plus extra for dusting
- 1/2 teaspoon salt
Wet Ingredients
- 1/2 cup (115 g) butter, softened
- 1 cup (200 g) packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (120 ml) maple syrup
Fruit
- 2 medium ripe pears, peeled, cored, and diced
Maple Glaze
- 1/4 cup maple syrup
- 1 tablespoon butter
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and grease or line a 9-inch round cake pan to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt until evenly combined.
- Prepare Pears: Peel, core, and dice the ripe pears into small, uniform pieces and set them aside.
- Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy. Then, add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Combine Batter: Gradually add the dry flour mixture to the butter mixture, alternating with the maple syrup. Mix until just combined, taking care not to overmix to keep the cake tender.
- Fold in Pears: Gently fold the diced pears into the batter to distribute them evenly without bruising.
- Bake: Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 40 to 50 minutes or until a toothpick inserted into the center comes out clean.
- Prepare Maple Glaze: While the cake is baking, combine 1/4 cup maple syrup and 1 tablespoon butter in a small saucepan over low heat. Stir until the butter is melted and the glaze is warm and smooth.
- Cool and Glaze the Cake: Once the cake is done, allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack and drizzle the warm maple glaze evenly over the top. Optionally, dust with a little extra ground cinnamon for garnish.
