Ingredients
Scale
Chicken
- 4 boneless skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
Sauce
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons unsalted butter
- 2 tablespoons fresh basil, chopped
Instructions
- Season the chicken: Pat the chicken breasts dry and season both sides evenly with salt, black pepper, and garlic powder to enhance flavor.
- Sear the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 4 to 5 minutes per side or until golden brown and cooked through. Remove from skillet and set aside.
- Sauté garlic: In the same skillet, add minced garlic and cook for about 1 minute until fragrant, stirring frequently to prevent burning.
- Deglaze and make sauce: Pour in chicken broth, scraping the bottom of the pan to loosen browned bits. Stir in heavy cream, grated Parmesan, chopped sun-dried tomatoes, Italian seasoning, and optional red pepper flakes. Add butter and stir until melted and the sauce begins to thicken.
- Simmer chicken in sauce: Return the seared chicken breasts to the skillet, spooning sauce over them. Simmer for 8 to 10 minutes until chicken is fully cooked and the sauce is creamy and flavorful.
- Finish and garnish: Remove from heat and sprinkle chopped fresh basil over the dish before serving to add fresh herbal notes.
Notes
- Serve with pasta, rice, or mashed potatoes to soak up the creamy sauce.
- For a lighter version, substitute half-and-half for heavy cream but the sauce will be less rich.
- This dish is best enjoyed fresh but can be refrigerated for up to 3 days in an airtight container.
