- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Preheat the oven: Preheat the oven to 400°F and lightly grease a 12-cup muffin tin with nonstick spray.
- Mix ingredients: In a large mixing bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan, sour cream, chives, garlic powder, salt, and black pepper. Stir until well mixed and creamy.
- Fill muffin tin: Spoon the mixture evenly into the muffin tin, filling each cup almost to the top.
- Bake: Bake for 25–30 minutes or until the tops are golden brown and slightly crispy.
