- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Rice:
- 1 cup uncooked white or brown rice
- 2 cups water or chicken broth
Toppings:
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- 1/4 red onion (thinly sliced)
- 1/2 cup crumbled feta cheese
- 1/4 cup kalamata olives (sliced)
- 1/4 cup chopped fresh parsley
- 1/2 cup tzatziki sauce (for serving)

Instructions
- Marinate the Chicken: Combine 1 tablespoon olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Add chicken, toss to coat, and marinate.
