  • juice of 1 lemon
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Rice:

  • 1 cup uncooked white or brown rice
  • 2 cups water or chicken broth

Toppings:

  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/4 red onion (thinly sliced)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives (sliced)
  • 1/4 cup chopped fresh parsley
  • 1/2 cup tzatziki sauce (for serving)
  • lemon wedges for garnish

Instructions

  1. Marinate the Chicken: Combine 1 tablespoon olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Add chicken, toss to coat, and marinate.
  2. Cook the Rice: Prepare rice with water or broth as per package instructions.
