For the steak:
- 1 lb flank or skirt steak
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the bowl:
- 1 cup cooked quinoa or rice
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup hummus
- 2 tablespoons tzatziki sauce
- Fresh parsley for garnish (optional)
Instructions
- Rub the steak: Rub the steak with olive oil, oregano, garlic powder, salt, and pepper. Marinate for at least 15 minutes.
- Cook the steak: Heat a grill or skillet over medium-high heat. Cook the steak for 4–5 minutes per side. Let it rest for 5 minutes, then slice thinly against the grain.
- Assemble the bowls: Start with quinoa or rice. Top with tomatoes, cucumber, red onion, olives, and steak. Add hummus, tzatziki, feta, and parsley.
- Serve warm or at room temperature.
Notes
- For a low-carb version, use cauliflower rice.
- Substitute chicken or chickpeas for a different protein.
