Description

A delightful Mediterranean Steak Bowl recipe that features tender marinated steak served over a bed of quinoa or rice, topped with fresh vegetables, feta cheese, and creamy hummus and tzatziki sauces.

For the steak:

  • 1 lb flank or skirt steak
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the bowl:

  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup hummus
  • 2 tablespoons tzatziki sauce
  • Fresh parsley for garnish (optional)

Instructions

  1. Rub the steak: Rub the steak with olive oil, oregano, garlic powder, salt, and pepper. Marinate for at least 15 minutes.
  2. Cook the steak: Heat a grill or skillet over medium-high heat. Cook the steak for 4–5 minutes per side. Let it rest for 5 minutes, then slice thinly against the grain.
  3. Assemble the bowls: Start with quinoa or rice. Top with tomatoes, cucumber, red onion, olives, and steak. Add hummus, tzatziki, feta, and parsley.
  4. Serve warm or at room temperature.
