Salad:
- 2 cups mixed salad greens
- 1 cup cucumber diced
- 1 cup cherry tomatoes halved
- 1/4 cup red onion thinly sliced
- juice of 1 lemon
- 2 tablespoons olive oil
- 1/4 teaspoon salt
Flatbreads and Serving:
- 4 flatbreads such as pita or naan
- 1/2 cup plain Greek yogurt or tzatziki for serving
Instructions
- Kofta Kebabs: In a large bowl, combine ground meat, grated onion, garlic, parsley, cilantro, cumin, coriander, paprika, cinnamon, salt, and black pepper. Shape onto skewers and refrigerate. Grill for 3–4 minutes per side.
- Salad: Toss salad greens, cucumber, cherry tomatoes, and red onion with lemon juice, olive oil, and salt.
- Flatbreads: Warm in a skillet or oven.
- Serve: Place kofta kebabs on a platter with salad, warm flatbreads, and Greek yogurt or tzatziki.
Notes
- For extra flavor, marinate the kofta mixture before cooking.
- You can also bake the koftas in the oven at 400°F (200°C) for 15–18 minutes.
