Description

These Mini McGriddle Bites are a delightful twist on the classic breakfast sandwich. Perfectly portioned, these mini bites pack all the flavors of a McGriddle into a convenient and delicious snack-sized treat.

Ingredients

Scale

Dry Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients:

  • ¾ cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • ½ teaspoon vanilla extract

Additional Ingredients:

  • ½ cup cooked breakfast sausage, crumbled
  • ½ cup shredded cheddar cheese
  • ¼ cup maple syrup (plus extra for serving)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and lightly grease a mini muffin pan.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Combine wet ingredients: In another bowl, whisk together buttermilk, egg, melted butter, and vanilla. Pour the wet ingredients into the dry and stir until just combined.
  4. Add additional ingredients: Gently fold in cooked sausage, cheddar cheese, and maple syrup.
  5. Bake: Divide the batter evenly among the mini muffin cups, filling about ¾ full. Bake for 12 to 15 minutes, or until golden and a toothpick inserted into the center comes out clean.
  6. Serve: Let cool for 5 minutes before serving with extra maple syrup for dipping.

Notes

  • You can substitute bacon for sausage or use a mix of both.
  • These freeze well—just reheat in the microwave or air fryer for a quick breakfast.
  • For a sweeter bite, drizzle with warm maple syrup before serving.
