Ingredients
Eggs:
6 large eggs
Milk:
1/2 cup (dairy or plant-based)
Salt:
1/2 teaspoon
Black Pepper:
1/4 teaspoon
Garlic Powder:
1/4 teaspoon
Cheddar Cheese:
1/2 cup shredded
Red Bell Pepper:
1/4 cup diced
Spinach:
1/4 cup chopped
Broccoli:
1/4 cup finely chopped
Green Onions:
1/4 cup chopped
Nonstick Cooking Spray:

Instructions
- Preheat the oven: Preheat the oven to 375°F and spray a 12-cup muffin tin with nonstick spray.
- Prepare the egg mixture: In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined. Stir in the cheese, bell pepper, spinach, broccoli, and green onions.
- Fill the muffin cups: Divide the mixture evenly among the muffin cups, filling each about 3/4 full.
- Bake: Bake for 18–22 minutes, or until the centers are set and the tops are lightly golden.
- Serve: Allow to cool in the pan for 5 minutes, then remove and serve warm, or let cool completely for storing.
