Description

Monterey Chicken is a delicious and easy-to-make American main course featuring seared chicken breasts topped with crispy bacon, melted Monterey Jack cheese, fresh tomatoes, green onions, and oregano, then baked to perfection. This gluten-free dish offers a flavorful combination of smoky, cheesy, and savory tastes, perfect for a quick weeknight dinner or a casual family meal.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Toppings

  • 4 slices cooked bacon, chopped
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 teaspoon dried oregano
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) to prepare for baking the chicken after searing.
  2. Season Chicken: Season the chicken breasts evenly on both sides with salt, black pepper, garlic powder, and paprika to infuse flavor.
  3. Sear Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the seasoned chicken breasts for 3 to 4 minutes on each side until they develop a golden brown crust. Then remove the skillet from heat.
  4. Add Toppings: Evenly distribute chopped bacon, shredded Monterey Jack cheese, diced tomatoes, sliced green onions, and a sprinkle of dried oregano over each chicken breast.
  5. Bake: Transfer the skillet to the preheated oven. Bake for 15 to 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese has melted and is bubbly.
  6. Rest and Garnish: Remove the skillet from the oven and allow the chicken to rest for 5 minutes to retain juices. Optionally, garnish with fresh parsley before serving.

Notes

  • Chicken thighs can be used instead of breasts for a juicier texture.
  • For an extra flavor boost, add chili powder or smoked paprika to the seasoning blend.
  • Serve with rice, mashed potatoes, or a fresh side salad for a complete meal.
