  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Coconut Pecan Frosting:

  • 1/2 cup evaporated milk
  • 1/2 cup packed light brown sugar
  • 1/4 cup unsalted butter
  • 2 large egg yolks
  • 1/2 teaspoon vanilla extract
  • 3/4 cup sweetened shredded coconut
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven: Preheat to 350°F (175°C) and line a cupcake pan with liners.
  2. Mix chocolate: Pour boiling water over chopped German chocolate, stir until smooth, let cool.
  3. Combine dry ingredients: Whisk flour, baking soda, and salt in a bowl.
  4. Prepare batter: Beat butter and sugar, add eggs, vanilla, and melted chocolate. Alternate adding flour mixture and buttermilk.
  5. Bake: Fill liners, bake for 18–20 minutes until a toothpick comes out clean. Cool.
  6. Make frosting: Cook milk, sugar, butter, egg yolks until thickened. Stir in vanilla, coconut, and pecans. Cool and spread on cupcakes.
