Ingredients
Scale
Sandwich Components
- 8 slices of sourdough bread
- 8 slices Gouda cheese
- 4 tablespoons butter
Vegetable Filling
- 1 lb mushrooms, sliced
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Caramelize the Onions: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the thinly sliced onions along with a pinch of salt. Stir occasionally and cook for about 15 to 20 minutes until the onions become golden brown and caramelized.
- Sauté the Mushrooms: Add the sliced mushrooms to the skillet with the caramelized onions. Season with salt and pepper to taste. Continue cooking for about 10 minutes until the mushrooms turn golden and all liquid evaporates, stirring occasionally.
- Prepare the Bread: Butter one side of each slice of sourdough bread evenly using the softened butter. This will help create a golden crispy exterior when grilled.
- Assemble the Sandwich: Place one slice of bread, butter-side down, onto a clean skillet over medium heat. Layer one slice of Gouda cheese, followed by a generous amount of the mushroom and onion mixture, then top with another slice of Gouda cheese.
- Grill the Sandwich: Place another slice of bread on top, butter-side up. Cook the sandwich until the bread is golden brown and the cheese starts to melt, about 3-4 minutes. Carefully flip the sandwich and grill the other side until browned and the cheese melts completely, another 3-4 minutes.
- Repeat and Serve: Repeat the process with the remaining bread slices and filling to make all four sandwiches. Serve warm and enjoy your hearty grilled cheese.
Notes
- Use sourdough bread for a sturdy base that crisps nicely while grilling.
- Make sure to cook the onions slowly to achieve deep caramelization without burning.
- You can substitute Gouda cheese with similar melting cheeses like Havarti or Fontina.
- If desired, add fresh herbs like thyme or parsley to the mushroom mixture for extra flavor.
- For crispier sandwiches, press down gently with a spatula while grilling.
