Ingredients

Chicken Thighs:

8 bone-in, skin-on chicken thighs

Marinade:

¼ cup olive oil, ¼ cup soy sauce, ¼ cup honey, 2 tablespoons Dijon mustard, 4 cloves garlic (minced), 1 teaspoon dried thyme, ½ teaspoon black pepper, juice of 1 lemon

Garnish:

chopped parsley for garnish (optional)


Instructions

  1. Marinate the Chicken: In a large mixing bowl or zip-top bag, whisk together olive oil, soy sauce, honey, Dijon mustard, garlic, thyme, black pepper, and lemon juice. Add the chicken thighs and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 8 hours for deeper flavor.
  2. Preheat and Roast: Preheat the oven to 400°F (200°C). Arrange the marinated chicken thighs skin-side up in a single layer on a foil-lined baking dish or sheet pan. Pour any remaining marinade over the top. Roast for 35–45 minutes, or until the chicken skin is golden and crisp and the internal temperature reaches 165°F (74°C). Baste once or twice during cooking for extra flavor and moisture.
  3. Rest and Serve: Let rest for 5 minutes before serving. Garnish with chopped parsley if desired.
