- Prepare the berries: Rinse the mixed fresh berries thoroughly and gently pat them dry with paper towels to remove excess moisture.
- Whip the cream: In a large bowl, beat the heavy whipping cream using an electric mixer until soft peaks form. Gradually add the granulated sugar and vanilla extract, then continue whipping until stiff peaks form, which should take about 3 to 5 minutes.
- First layer: In an 8×8 inch baking dish, place a layer of graham crackers to cover the bottom evenly. Spread half of the whipped cream mixture over the crackers and then sprinkle half of the berries evenly on top.
- Second layer: Add another layer of graham crackers on top of the berries. Spread the remaining whipped cream over it, and finish by arranging the remaining berries on the surface.
- Chill the cake: Cover the dish tightly with plastic wrap and place it in the refrigerator. Let it chill for at least 4 hours or overnight to allow the graham crackers to soften and flavors to meld.
