Ingredients
Scale
Chicken
- 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper, to taste
Noodles
- 3 cups chicken broth
- 2 cups egg noodles
- 3 tbsp unsalted butter
- 3 cloves garlic, minced
Garnish
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- Cook the chicken: Heat olive oil in a large skillet over medium heat. Season chicken pieces with garlic powder, paprika, salt, and pepper. Add chicken to the pan and cook for 6–8 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.
- Cook the noodles: In the same skillet, bring the chicken broth to a boil. Stir in the egg noodles, reduce heat to medium, cover, and cook for 8–10 minutes. Stir occasionally until the noodles are tender and most of the broth is absorbed.
- Add butter and garlic: Lower the heat and stir in the butter and minced garlic. Cook for 1–2 minutes until the garlic is fragrant and the butter is melted and incorporated.
- Combine chicken and noodles: Return the cooked chicken to the skillet and mix well with the buttered noodles.
- Finish and serve: Sprinkle grated Parmesan cheese and chopped parsley on top before serving for extra flavor and a fresh touch.
Notes
- Use chicken thighs for more flavor and juiciness, or breasts for a leaner option.
- Fresh parsley is optional but adds a nice color and freshness.
- If you prefer, substitute Parmesan with Pecorino Romano or any hard cheese of your choice.
- For a lower sodium dish, use low-sodium chicken broth and adjust salt accordingly.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated gently on the stovetop or microwave.
