- 1 pound ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 (15-ounce) can diced tomatoes with juice
- 1 (8-ounce) can tomato sauce
- 2 cups beef broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups uncooked elbow macaroni
- 1 cup shredded cheddar cheese (optional)
- Chopped parsley for garnish (optional)
Instructions
- Heat the olive oil: In a large pot or deep skillet over medium heat.
- Cook the ground beef: Until browned, breaking it up with a spoon, about 5–6 minutes. Drain excess fat if needed.
- Add onion and garlic: Cook until softened, then add garlic and cook for another 30 seconds.
- Incorporate tomatoes and seasonings: Add diced tomatoes, tomato sauce, beef broth, Italian seasoning, paprika, salt, and pepper. Bring to a boil.
- Add macaroni: Reduce heat to a simmer, cover, and cook for 10–12 minutes until pasta is tender.
- Optional: Stir in cheddar cheese until melted. Garnish with parsley before serving.

- For extra veggies, stir in chopped bell peppers or spinach while the pasta simmers.
