For the Macaroni and Beef:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound ground beef (85% lean)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 2 tablespoons tomato paste
- 1 can (14.5 ounces) diced tomatoes, with juices
- 2 cups beef broth
- 2 cups elbow macaroni, uncooked
- 1 cup shredded cheddar cheese
For Garnish:
- Chopped fresh parsley for garnish (optional)
Instructions
- Heat the olive oil: Heat olive oil in a large pot or Dutch oven over medium heat.
- Sauté onion and garlic: Add the diced onion and sauté until softened. Stir in the garlic and cook for 30 seconds.
- Cook the beef: Add the ground beef, breaking it apart and cook until browned. Season with salt, pepper, paprika, oregano, and basil.
- Add tomato paste and tomatoes: Stir in the tomato paste and cook briefly. Add diced tomatoes and beef broth.
- Cook the macaroni: Add the macaroni, stir well, and bring to a boil. Simmer for 12–15 minutes until pasta is tender.
- Add cheese: Remove from heat, stir in shredded cheddar cheese until melted.
- Garnish and serve: Garnish with fresh parsley if desired and serve warm.
Notes
- For a lighter version, use ground turkey instead of beef.
- You can also add chopped bell peppers or frozen peas for extra vegetables.
