For the Macaroni and Beef:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef (85% lean)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 2 tablespoons tomato paste
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 2 cups beef broth
  • 2 cups elbow macaroni, uncooked
  • 1 cup shredded cheddar cheese

For Garnish:

  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil: Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Sauté onion and garlic: Add the diced onion and sauté until softened. Stir in the garlic and cook for 30 seconds.
  3. Cook the beef: Add the ground beef, breaking it apart and cook until browned. Season with salt, pepper, paprika, oregano, and basil.
  4. Add tomato paste and tomatoes: Stir in the tomato paste and cook briefly. Add diced tomatoes and beef broth.
  5. Cook the macaroni: Add the macaroni, stir well, and bring to a boil. Simmer for 12–15 minutes until pasta is tender.
  6. Add cheese: Remove from heat, stir in shredded cheddar cheese until melted.
  7. Garnish and serve: Garnish with fresh parsley if desired and serve warm.

Notes

  • For a lighter version, use ground turkey instead of beef.
  • You can also add chopped bell peppers or frozen peas for extra vegetables.
