  • 2 medium yellow onions (thinly sliced)
  • 1/2 teaspoon salt
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped fresh parsley
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground black pepper
  • vegetable oil for frying

For the Sweet Chilli Soy Dipping Sauce:

  • 3 tablespoons sweet chilli sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sesame oil

Instructions

  1. Prepare the Onions: Place sliced onions in a bowl, sprinkle with salt, let sit for 10 minutes, then squeeze out excess liquid.
  2. Mix the Batter: In a bowl, combine onions, feta, parsley, eggs, flour, baking powder, and pepper. Mix until a thick batter forms.
  3. Fry the Fritters: Heat oil in a skillet, scoop batter into the oil, flatten slightly, fry for 2–3 minutes per side until golden and crispy.
  4. Make the Dipping Sauce: Whisk together sweet chilli sauce, soy sauce, rice vinegar, and sesame oil.
