Roasted Beets:
- 3 medium beets (roasted or steamed, peeled and sliced)

- 2 large oranges (peeled and sliced)
- 1/4 cup crumbled feta cheese
- 1/4 cup shelled pistachios (roughly chopped)
- 2 cups arugula or mixed greens
Dressing:
- 2 tablespoons olive oil
- 1 tablespoon white balsamic vinegar or champagne vinegar
- 1 teaspoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Garnish:
- Fresh mint leaves for garnish (optional)
Instructions
- Prepare the Dressing: In a small bowl, whisk together the olive oil, vinegar, honey, salt, and black pepper to make the dressing. Set aside.
- Assemble the Salad: In a large serving bowl or platter, arrange the arugula as a base. Layer the beet and orange slices over the greens. Sprinkle with crumbled feta and chopped pistachios.

- You can roast the beets ahead of time and store them in the fridge for up to 3 days.
- Blood oranges or Cara Cara oranges also work beautifully in this salad.
