Description

These Peach Pie Bars combine a buttery, crumbly oat crust with a sweet and tangy fresh peach filling, creating a delicious dessert that’s perfect for summer or anytime you crave a fruity treat. Easy to make and perfect for sharing, these bars offer the classic flavors of peach pie in a convenient slice form.

Ingredients

Scale

Crust and Topping

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup old-fashioned oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Peach Filling

  • 2 cups fresh peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare the crust: In a mixing bowl, combine the melted butter, all-purpose flour, old-fashioned oats, brown sugar, baking powder, and salt. Stir the ingredients together until the mixture becomes crumbly and resembles coarse sand.
  2. Make the peach filling: In a separate bowl, toss the peeled and sliced fresh peaches with granulated sugar, lemon juice, and ground cinnamon. Ensure the peaches are evenly coated with the sugar and spices for a flavorful filling.
  3. Assemble the bars: Press half of the oat crumb mixture firmly into the bottom of a baking dish to form the crust. Spread the peach filling evenly on top of the crust, then sprinkle the remaining oat mixture over the peaches as a topping.
  4. Bake: Preheat your oven to 350°F (175°C). Place the assembled baking dish in the oven and bake for 30 to 35 minutes, or until the top is golden brown and the peach filling is bubbling around the edges.
  5. Cool and serve: Remove the bars from the oven and allow them to cool for about 15 minutes. Slice into bars and serve warm or at room temperature for a delightful dessert.

Notes

  • You can substitute the old-fashioned oats with quick oats if necessary, but the texture may slightly differ.
  • For extra flavor, consider adding a pinch of nutmeg to the peach filling.
  • Ensure peaches are ripe and juicy for the best taste and moisture content.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • If desired, serve with a scoop of vanilla ice cream or a dollop of whipped cream.
