Instructions
- Preheat the oven and prepare baking sheets: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Prepare the dough: In a large bowl, beat together softened butter, peanut butter, and 1/2 cup powdered sugar until creamy. Mix in vanilla. Gradually add flour and salt, stirring until combined. Fold in mini chocolate chips.
- Form and bake the cookies: Roll the dough into 1-inch balls and place on the prepared baking sheets about 2 inches apart. Bake for 10 to 12 minutes until set but not browned. Let cool for 5 minutes.
- Coat the cookies: While still slightly warm, roll the cookies in powdered sugar to coat. Once completely cool, roll them in powdered sugar again for a snowy finish.
