- 1 teaspoon sesame oil
- 1 teaspoon fresh ginger, grated
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup reserved noodle cooking water
Vegetables and Garnishes
- 1/2 cup shredded carrots
- 1/2 cup sliced green onions
- 1 tablespoon sesame seeds (optional)
Instructions
- Cook the Noodles: Bring a pot of water to a boil and cook the ramen noodles according to the package directions, discarding the seasoning packets. Before draining, reserve about 1/4 cup of the noodle cooking water.
- Prepare the Peanut Sauce: In a bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, grated ginger, minced garlic, and red pepper flakes until smooth and well combined.
- Adjust Sauce Consistency: Stir in the reserved noodle cooking water a little at a time until the sauce reaches a creamy and pourable consistency.
- Combine Noodles and Sauce: Drain the noodles and return them to the pot or place them in a large bowl. Pour the peanut butter sauce over the noodles and toss well to evenly coat them.
- Add Vegetables: Mix in the shredded carrots and half of the sliced green onions into the noodles for added freshness and crunch.
- Serve and Garnish: Serve the peanut butter ramen immediately, garnished with the remaining green onions and optional sesame seeds for extra flavor and texture.
