  • 2 cups Basmati Rice (Substitute with jasmine rice if unavailable)
  • 4 cups Water
  • 2 tablespoons Unsalted Butter
  • 2 tablespoons Vegetable Oil

Vegetables and Spices

  • 1 medium Onion (Chopped)
  • 1 teaspoon Ground Cinnamon
  • 0.5 teaspoon Ground Cardamom
  • 0.5 teaspoon Ground Turmeric
  • 1 teaspoon Salt

Dried Fruits and Nuts

  • 1 cup Dried Apricots (Can substitute with figs or dates)
  • 0.5 cup Raisins (Other dried fruits can be swapped)
  • 0.5 cup Slivered Almonds (Feel free to use walnuts or pecans)
  • 0.5 cup Pistachios (Any nuts on hand can work)

Fresh Garnishes

  • 0.5 cup Pomegranate Seeds (Highly recommended for festive finish)
  • 0.25 cup Fresh Parsley (Can be replaced with mint)
  • 1 tablespoon Orange Zest (Lemon zest can also work)
  • 1 tablespoon Lemon Zest (Optional but delicious)


Instructions

  1. Rinse and Soak Rice: Rinse the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in cold water for 30 minutes to help elongate the grains during cooking, then drain well.
  2. Parboil the Rice: Bring 4 cups of water to a boil in a large pot. Add the soaked rice and cook it for about 10 minutes until it is al dente. Drain the rice and set it aside, ensuring to keep the grains separate.
  3. Sauté Onions and Spices: In the same pot, melt the unsalted butter together with the vegetable oil over medium heat. Add the chopped onion and sauté for about 5 to 7 minutes until golden brown and fragrant. Stir in the ground cinnamon, cardamom, turmeric, and salt, cooking for an additional minute to bloom the spices.
  4. Layer the Rice and Mix-ins: Spread half of the cooked rice evenly into the pot over the sautéed onions and spices. Top this layer with half of the dried apricots, raisins, slivered almonds, and pistachios. Then layer the remaining rice on top of the dried fruit and nuts, and sprinkle the rest of the dried fruits and nuts evenly across the surface.
  5. Steam the Rice: Cover the pot tightly with a lid, reduce the heat to low, and let the rice cook undisturbed for 30 to 40 minutes. This gentle steaming process allows the flavors to meld and the rice to fully tenderize.
  6. Rest the Rice: After cooking, remove the pot from heat but keep it covered. Let the rice rest for 10 minutes to finish steaming and to allow the grains to firm up slightly.
  7. Finish with Fresh Garnishes: Gently fluff the rice with a fork to separate the grains. Carefully fold in the pomegranate seeds, chopped fresh parsley, orange zest, and lemon zest for a vibrant and fresh finish. Serve warm as an elegant and festive dish.

Notes

  • Substitute jasmine rice for basmati if basmati is unavailable, though basmati is preferred for authentic flavor and texture.
  • Cardamom can be omitted if a simpler spice profile is desired.
