Description

These Pineapple BBQ Chicken Skewers are a perfect combination of sweet, tangy, and smoky flavors. Grilled to perfection, they make a delicious and colorful addition to any summer barbecue.

For the Marinade:

  • 1 cup barbecue sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

For the Skewers:

  • 2 pounds boneless skinless chicken breasts, cut into 1 1/2-inch cubes
  • 2 cups fresh pineapple chunks
  • 1 large red bell pepper, cut into 1 1/2-inch pieces
  • 1 large red onion, cut into wedges
  • Wooden or metal skewers

Instructions

  1. Marinate the Chicken: In a large bowl, combine barbecue sauce, soy sauce, olive oil, garlic, paprika, pepper, and salt. Add chicken cubes, coat well, cover, and refrigerate for at least 30 minutes.
  2. Prepare the Grill: Preheat grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes.
  3. Assemble Skewers: Thread marinated chicken, pineapple, bell pepper, and onion onto skewers alternately.
  4. Grill the Skewers: Grill for 10–12 minutes, turning and basting with extra marinade until chicken reaches 165°F internally.
  5. Serve: Remove from grill and serve hot.

Notes

  • You can use canned pineapple chunks if fresh is unavailable.
  • For a spicier kick, add 1 teaspoon of chili powder or a pinch of cayenne to the marinade.
