  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup finely chopped pistachios

Pistachio Latte Filling:

  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk
  • 1 tablespoon pistachio paste
  • 1 teaspoon instant espresso powder
  • Pinch of salt

Instructions

  1. Prepare the Cookies: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper. Cream together butter, sugars, egg, and vanilla. Mix dry ingredients, combine, and add pistachios. Bake and cool.
  2. Make the Filling: Beat butter, add sugar, milk, pistachio paste, espresso powder, and salt. Spread or pipe onto cookies and sandwich together.
