Cookies:

- 1 teaspoon vanilla extract

- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup finely chopped pistachios
Pistachio Latte Filling:
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 2 tablespoons milk
- 1 tablespoon pistachio paste
- 1 teaspoon instant espresso powder
- Pinch of salt
Instructions
- Prepare the Cookies: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper. Cream together butter, sugars, egg, and vanilla. Mix dry ingredients, combine, and add pistachios. Bake and cool.
- Make the Filling: Beat butter, add sugar, milk, pistachio paste, espresso powder, and salt. Spread or pipe onto cookies and sandwich together.
Notes
- For a stronger pistachio flavor, add a drop of pistachio extract to the filling.
- Store cookies in the refrigerator for a firmer filling or at room temperature for a softer texture.
