Rice Paper Shrimp Rolls:
- 8 rice paper wrappers
- 16 cooked shrimp (peeled and deveined, tails removed, sliced in half lengthwise)
- 1 cup cooked rice noodles or vermicelli
- 1 cup shredded lettuce or cabbage
- 1 small carrot, julienned
- 1 cucumber, julienned
- ¼ cup fresh mint leaves
- ¼ cup fresh cilantro leaves
- optional: Thai basil leaves
- sesame seeds for garnish
For the dipping sauce:
- ¼ cup hoisin sauce
- 2 tablespoons peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 2–3 tablespoons warm water
Instructions
- Prepare fillings: Cook rice noodles, slice shrimp, and julienne vegetables.
- Soften rice paper: Dip one wrapper in warm water.
- Fill and roll: Layer noodles, veggies, herbs, and shrimp, then roll tightly.
- Make dipping sauce: Whisk hoisin, peanut butter, soy sauce, vinegar, oil, and water.
- Serve: Enjoy rolls with sauce and garnish with sesame seeds.
