Instructions
- Pack the Tomatoes: Pack the sliced green tomatoes tightly into clean glass jars, leaving about 1/2 inch of space at the top.
- Prepare the Brine: In a medium saucepan, combine the vinegar, water, salt, and sugar. Bring to a boil, stirring until the salt and sugar dissolve. Remove from heat.
- Add Flavorings: Distribute the garlic cloves, peppercorns, mustard seeds, dill seeds, red pepper flakes (if using), and fresh dill evenly among the jars.
- Pour the Brine: Carefully pour the hot brine over the tomatoes, covering them completely. Tap the jars gently to release any air bubbles and seal with lids.
- Chill and Enjoy: Let cool to room temperature, then refrigerate for at least 48 hours before eating for the best flavor.
