  • 5 ounces fresh spinach, roughly chopped
  • 4 large eggs
  • 1 cup half-and-half or heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 cup shredded Gruyère or Swiss cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C). Place the pie crust in a 9-inch pie dish, prick the bottom with a fork, and pre-bake for 8 minutes.
  2. Prepare the filling: Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 4 minutes. Stir in garlic and cook for 1 minute. Add spinach and cook until just wilted, then remove from heat and let cool slightly.
  3. Combine the ingredients: In a large bowl, whisk together eggs, half-and-half, salt, pepper, and nutmeg. Spread the spinach mixture evenly over the pre-baked crust. Sprinkle with Gruyère and Parmesan cheese. Pour the egg mixture over the filling.
  4. Bake: Bake for 35–40 minutes, or until the quiche is set in the center and lightly golden on top. Allow to rest for 10 minutes before slicing and serving.
