Ingredients
Scale
Shrimp
- 16 ounces large shrimp, peeled and deveined with tails removed
- 3 tablespoons unsalted butter, divided
- 2 cloves garlic, minced
Sauce and Pasta
- 16 ounces chicken broth
- 8 ounces whole milk
- 8 ounces fettuccine noodles, dry
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/8 teaspoon nutmeg
- 1 cup freshly grated parmesan cheese
- 4 ounces heavy cream
Instructions
- Cook the Shrimp: In a sauté pan over medium heat, melt two tablespoons of the unsalted butter. Add the peeled and deveined shrimp and cook for 1 to 2 minutes per side until the shrimp turn opaque and are fully cooked. Remove the shrimp from the pan and set aside.
- Make the Sauce and Cook Pasta: Using the same pan, add the remaining one tablespoon of butter and minced garlic. Sauté the garlic briefly until it becomes fragrant. Pour in the chicken broth and whole milk. Add the dry fettuccine noodles along with kosher salt, pepper, and nutmeg. Cover the pan and simmer for about 11 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.
- Finish the Dish: Stir in the freshly grated Parmesan cheese and heavy cream into the pasta mixture, mixing thoroughly until the sauce is smooth and creamy. Return the cooked shrimp to the pan and toss gently to combine all ingredients. Remove from heat and let the dish sit for 5 minutes to allow the sauce to thicken and flavors to meld before serving.
Notes
- You can adjust the seasoning with additional salt and pepper to taste before serving.
- For a lighter version, substitute heavy cream with half-and-half, though the sauce will be less rich.
- If you prefer, garnish with chopped fresh parsley or additional Parmesan cheese for a burst of flavor and color.
- Ensure shrimp are not overcooked to keep them tender and juicy.
- This recipe works well with other types of pasta such as linguine or tagliatelle if fettuccine is not available.
