Beef Curry:

  • 1 teaspoon ground cumin

  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) coconut milk
  • 1 cup beef broth
  • 2 medium potatoes, peeled and cubed
  • 2 medium carrots, sliced
  • 1 red bell pepper, chopped
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Brown the Beef: In a large skillet, heat the oil and brown the beef cubes in batches until golden. Transfer to the slow cooker.
