Description

Delicious and creamy Smothered Green Chile Chicken Burritos that combine tender shredded chicken, tangy sour cream, and zesty green chiles. Topped with green enchilada sauce and melted cheese, these baked burritos make a comforting and flavorful meal perfect for any night.

Ingredients

Scale

Filling

  • 2 cups cooked, shredded chicken
  • 1 can (4 oz) diced green chiles
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste

Assembly

  • 4 large flour tortillas
  • 1 can (10 oz) green enchilada sauce
  • 1 cup shredded cheese (Monterey Jack or Cheddar)
  • 1 tablespoon olive oil (for warming tortillas)
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the burritos.
  2. Prepare Filling: In a large bowl, combine cooked shredded chicken, diced green chiles, sour cream, garlic powder, onion powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  3. Warm Tortillas: Heat a skillet over medium heat and warm each flour tortilla briefly to make them pliable and easier to roll.
  4. Assemble Burritos: Spoon the chicken mixture evenly onto each warmed tortilla. Roll them tightly and place seam-side down in a greased baking dish to ensure they stay closed while baking.
  5. Add Sauce: Pour the green enchilada sauce evenly over the top of the rolled burritos, coating them completely.
  6. Add Cheese: Sprinkle shredded Monterey Jack or Cheddar cheese evenly over the enchilada sauce for a gooey topping.
  7. Bake: Place the baking dish in the preheated oven and bake for 25–30 minutes, or until the cheese is melted, bubbly, and slightly browned.
  8. Garnish & Serve: Remove from oven and garnish with fresh cilantro if desired. Serve warm and enjoy your smothered burritos.

Notes

  • Use shredded rotisserie chicken to save time.
  • For extra heat, add chopped jalapeños or a dash of cayenne pepper to the filling.
  • You can substitute sour cream with Greek yogurt for a lighter option.
  • Flour tortillas work best for rolling, but you can use whole wheat tortillas for a healthier twist.
  • Serve with sides like guacamole, salsa, or Mexican rice for a full meal.
