For the Onion Rings:
- 2 large sweet onions, cut into 1/2-inch rings
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup buttermilk
- 2 large eggs
- 2 cups panko breadcrumbs
- Vegetable oil for frying
Instructions
- Prepare the Onion Rings: Peel and slice the onions into rings, separating them gently.
- Mix the Coating: In a medium bowl, whisk together the flour, baking powder, garlic powder, smoked paprika, salt, and black pepper.
- Prepare the Dredging Station: In a separate bowl, whisk the buttermilk and eggs until smooth. Place the panko breadcrumbs in another shallow bowl.
- Coat the Onion Rings: Dredge each onion ring in the flour mixture, then dip into the buttermilk mixture, and finally coat well with panko breadcrumbs.
- Let Them Rest: Place coated rings on a tray and let them rest for 10 minutes to set.
- Fry the Rings: Heat 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C). Fry the onion rings in batches for 2–3 minutes per side, or until golden brown and crispy.
- Serve: Remove with a slotted spoon, drain on paper towels, and serve hot with your favorite dipping sauce.
Notes
- For an extra crunchy coating, double-dip the onion rings by repeating the flour and buttermilk steps before dredging in panko.
- These taste best fresh but can be reheated in the oven at 400°F for 5–7 minutes to re-crisp.
