Ingredients
Scale
Banana Mixture
- 5 ripe bananas, sliced
- 1 cup granulated sugar
- ½ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
Batter
- 1 cup self-rising flour
- 1 cup whole milk
- ½ cup granulated sugar
- ½ teaspoon ground nutmeg (optional)
Instructions
- Preparation: Preheat your oven to 350°F (175°C). Lightly grease a baking dish with butter or nonstick cooking spray to prevent sticking.
- Mix Banana Filling: In a large mixing bowl, combine the sliced bananas with 1 cup sugar, melted butter, vanilla extract, ground cinnamon, and salt. Stir gently until the bananas are well coated and the mixture is uniform.
- Prepare Batter: In a separate bowl, whisk together the self-rising flour, whole milk, ½ cup sugar, and optional nutmeg until just combined, being careful not to overmix to keep the batter light.
- Assemble Cobbler: Pour the batter evenly into the prepared baking dish. Then, spoon the banana mixture evenly over the top of the batter without stirring, allowing the banana topping to sink slightly during baking.
- Bake: Place the baking dish in the center of the preheated oven. Bake for 45–50 minutes, or until the cobbler turns golden brown and the edges are bubbly.
- Rest and Serve: Remove the cobbler from the oven and let it rest for about 10 minutes to set before serving. This resting time helps the flavors meld and makes slicing easier.
Notes
- Use ripe bananas for maximum sweetness and flavor.
- For a dairy-free option, substitute milk with almond or oat milk and use vegan butter.
- The optional nutmeg adds a warm depth but can be omitted if unavailable.
- Serve warm, optionally with vanilla ice cream or whipped cream for an extra indulgence.
- Ensure the batter is not overmixed to maintain a tender texture.
