Shrimp:

Pickling Liquid:
- 1 cup thinly sliced red onion
- 1 cup white vinegar
- ½ cup olive oil
- ¼ cup fresh lemon juice
- 1 tablespoon sugar
- 1 tablespoon kosher salt
- 1 tablespoon black peppercorns
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon celery seeds
- 2 cloves garlic, thinly sliced
- 2 bay leaves
- 1 tablespoon chopped fresh dill (or 1 teaspoon dried)
- 1 jalapeño pepper, thinly sliced
Instructions
- Cook the Shrimp: Bring a large pot of salted water to a boil. Cook shrimp for 2-3 minutes until pink and opaque. Drain and rinse under cold water.
- Prepare Pickling Liquid: Layer shrimp and red onions in a jar. In a saucepan, combine vinegar, olive oil, lemon juice, sugar, salt, spices, and jalapeño. Simmer for 3-5 minutes. Pour over shrimp.
- Marinate: Refrigerate for 24 hours before serving.
