Description

Chicken:

  • 4 boneless, skinless chicken thighs or breasts

Marinade:

  • 1/2 cup pineapple juice
  • 1/3 cup brown sugar

  • 2 cloves garlic, minced

Instructions

  1. Prepare Marinade: In a medium bowl, whisk together pineapple juice, brown sugar, soy sauce, sriracha, vinegar, garlic, ginger, and black pepper.
  2. Marinate Chicken: Place the chicken in a shallow dish or resealable bag, pour the marinade over it, and marinate for at least 30 minutes, preferably 2–4 hours.
  3. Cook Chicken: Preheat a skillet or grill pan over medium-high heat. Remove chicken from the marinade, reserving the excess liquid. Cook the chicken for 5–7 minutes per side, or until fully cooked and nicely browned.
  4. Make Sauce: While the chicken cooks, pour the remaining marinade into a small saucepan. Bring to a simmer and cook for 5–7 minutes. Optionally, stir in the cornstarch slurry and simmer until the sauce thickens.
  5. Serve: Drizzle the chicken with the spicy pineapple glaze, and garnish with green onions and sesame seeds.
