Chicken:
- 4 boneless, skinless chicken thighs or breasts
Marinade:
- 1/2 cup pineapple juice
- 1/3 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon sriracha or other hot sauce
- 1 tablespoon apple cider vinegar
- 2 cloves garlic, minced
- 1/2 teaspoon ground ginger
- 1/4 teaspoon black pepper
Optional for Serving:
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
- Chopped green onions and sesame seeds for garnish
Instructions
- Prepare Marinade: In a medium bowl, whisk together pineapple juice, brown sugar, soy sauce, sriracha, vinegar, garlic, ginger, and black pepper.
- Marinate Chicken: Place the chicken in a shallow dish or resealable bag, pour the marinade over it, and marinate for at least 30 minutes, preferably 2–4 hours.
- Cook Chicken: Preheat a skillet or grill pan over medium-high heat. Remove chicken from the marinade, reserving the excess liquid. Cook the chicken for 5–7 minutes per side, or until fully cooked and nicely browned.
- Make Sauce: While the chicken cooks, pour the remaining marinade into a small saucepan. Bring to a simmer and cook for 5–7 minutes. Optionally, stir in the cornstarch slurry and simmer until the sauce thickens.
- Serve: Drizzle the chicken with the spicy pineapple glaze, and garnish with green onions and sesame seeds.
