Description

These Spicy Shrimp and Veggie Skewers are a delicious and easy-to-make dish that’s perfect for grilling season. Marinated in a flavorful blend of spices and lime juice, the shrimp and veggies are threaded onto skewers and grilled to perfection. Serve them hot with a garnish of fresh parsley or cilantro for a vibrant and flavorful meal.

Ingredients

Scale

Shrimp Skewers:

  • 1 lb large shrimp, peeled and deveined
  • 1 red bell pepper, chopped into 1-inch pieces
  • 1 zucchini, sliced into thick rounds
  • 1 red onion, cut into chunks
  • 2 tablespoons olive oil

Marinade:

  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • juice of 1 lime
  • fresh chopped parsley or cilantro for garnish (optional)

Instructions

  1. In a large bowl, prepare the marinade: Whisk together olive oil, smoked paprika, chili powder, cayenne pepper, garlic powder, salt, black pepper, and lime juice.
  2. Marinate: Add the shrimp and chopped vegetables to the bowl and toss until evenly coated. Cover and marinate in the refrigerator for 20–30 minutes.
  3. Prepare skewers: If using wooden skewers, soak them in water. Thread the shrimp and vegetables onto skewers, alternating for variety.
  4. Grill: Preheat a grill or grill pan over medium-high heat. Grill the skewers for 2–3 minutes per side, until shrimp are opaque and vegetables are tender with grill marks.
  5. Serve: Hot, garnished with fresh parsley or cilantro if desired.

Notes

  • These skewers pair well with rice, salad, or tortillas.
  • Adjust cayenne pepper for preferred spice level.
  • Enhance with additional veggies like mushrooms or cherry tomatoes.
